TURKEY CASSEROLE – Great for Leftovers!

If you are having turkey for Christmas dinner, here is another recipe that is great for using up the leftovers.

TURKEY CASSEROLE

4 cups leftover prepared stuffing, divided

4 cups coarsely chopped cooked turkey

3/4 cup mayonnaise, divided

1/2 cup whole berry cranberry sauce

2 cups mashed potatoes

1-1/2 cups shredded Mozzarella cheese

Preheat oven to 375 degrees F.  Spray 8 inch baking dish with nonstick cooking spray.  Spoon in 2 cups of stuffing, top with turkey.  Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.  Combine remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl.  Evenly spread on turkey; top with remaining 2 cups sutffing.  Bake 40 minutes or until heated through.  Let stand ten minutes before serving.  Makes 6 servings.
