We had ham and turkey on Christmas Day after all the presents had been opened.  We had munched on all sorts of appetizers, chips and veggies during the morning, and at the last minute, I decided to add macaroni and cheese as a side dish for the afternoon meal.  I didn’t have much time, so I improvised using a new product I had not tried before, Progresso’s Recipe Starters Creamy Three Cheese cooking sauce.  I bought it along with the other flavors when they went on sale a few weeks ago, and the recipe on the can calls for 2 cups of grated cheddar and/or American cheese to be added, along with garlic, milk and bacon pieces.  However, I didn’t want to spend time frying bacon, so I simply heated the sauce in the pan, stirred in about 1-1/2 cups of grated cheddar and cooked it until the cheese melted into the sauce.  I then poured it over 8 oz of cooked small penne, mixed thoroughly, put it into a greased 8 x 8 glass baking dish, and sprinkled more cheese and panko bread crumbs on the top.  It baked in the oven at 400 degrees for about 30 minutes until it was brown on top and bubbly.  In restrospect, I would add milk next time to make a little more sauce, but it turned out just fine and I am going to see what else I can use the cheese cooking sauce for in future.
