From the 1887 cookbook published by Dr. Price’s Baking Powder and Extract Company. I love the part where it says, “…must be beaten for a long time,…”
LEMON CAKE
One pound flour, one of sugar, three-fourths pound butter, seven eggs, juice of one lemon, one half teaspoonful of soda, flavor to taste with extract of lemon. The sugar, butter and yelks of eggs must be beaten for a long time, adding by degrees the flour, and the whites of the eggs last. A tumbler and a half of sliced citron may be added. This keeps well.
