Dr. Price’s Orange Cake – 1887

Unlike most of the others I have previously posted, this recipes has quite a few directions.  Beating for five minutes is probably not necessary unless you are beating by hand.


One half cup butter, two cups sugar, five eggs, one pint flour, one and a half teaspoonfuls baking powder, one teaspoonful orange extract, one cup milk.  Rub the butter and sugar to a cream; add the eggs, two at a time, beating five minutes between each addition; add the flour sifted with the baking powder, the milk and extract.  Mix into a smooth batter, put in a cake tin and bake in a moderately hot oven half an hour.  When cool, cover the top with the following: whip the whites of three eggs to a froth, then carefully mix in four cups sugar, the juice, grated rind and soft pulp free of pith and seeds of two sour oranges.
