I think this came from Rachel Ray’s magazine. I tried them the other day and they are great! Easy to get the corn now that it’s in all the stores.
CHEDDAR-CORN BISCUITS
1-1/4 cups flour
1-1/2 teaspoon baking powder
1-1/2 teaspoon sugar
1 teaspoon salt
1 cup shredded cheddar
1/3 cup fresh corn
1-1/4 cups heavy cream
In a bowl, whisk flour, baking powder, sugar and salt; mix in cheese and corn. Stir in cream. Spoon 6 mounds onto parchment-lined pan. Bake at 400 degrees F for 25 minutes. Great served with sausages or bacon!
