Keeping with yesterday’s salsa theme, here is an old standby that can be served with chips or as a side dish.
FIESTA SALSA
1 – 15 oz. can black beans, rinsed and drained
1-10 oz can tomatoes with green chiles, undrained
1 – 7 oz can whole kernel yellow corn with red and green bell peppers, drained
2 tablespoons chopped fresh parsley ( I substitute I tablespoon fresh chopped cilantro since I don’t like parsley)
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
In a medium bowl, combine black beans, tomatoes corn, parsley, cumin, garlic powder and salt, stirring to combine. At this point, I also throw in about 3/4 teaspoon white pepper for the extra kick.
I have served this as a side dish using hollowed out green and red bell peppers, filling each with the salsa before serving.
