This recipe was in the July/August issue of Rachael Ray Magazine and it was intended as a 4th of July cookie, but I think it an be used for any holiday by simply changing the shape of the cookie cutter. All you need is sugar cookie dough (from scratch or refrigerated) and frosting, plus candies or other delights for the filling.
Roll your favorite sugar cookie dough into a thin sheet, cut large stars (or other shape) and bake as directed. While the cookies are still warm, cut a circle out of the center of every third one with a small round cutter. Once cool, start assembling: use a whole cookie as the base, then frost the top and bottom of a hollowed cookie and place it on top. Fill the hole with small candies, jam, lemon curd, or any other sweet treat, and top with a whole cookie to seal everything in. Decorate as you like with more frosting and sprinkles etc.
