There are many types of blue cheese, made in many countries around the world.  I also like Gorgonzola cheese, which is another type of blue.  However, my favorite of all of them is Stilton Blue Cheese made in England.  Nothing like Stilton aged in a covered crock with some port wine added to it!  For this recipe, any blue cheese will work with the rest of the ingredients so give one  a try!  Also, this salad doesn’t wilt because there is no lettuce!


7 oz blanched green beans

1 small red onion, very thinly sliced

9 oz plum tomatoes, halved

7 oz Gorgonzola or Blue Cheese, broken into rough chunks

2 tablespoons green olive tapenade

3 tablespoons olive oil

Ciabatta bread for serving

In a bowl, mix the green beans and onion slices with the tomatoes and Gorgonzola.  Mix together the olive tapenade and olive oil and serve alongside the salad for spooning over.  Accompany with warm Ciabatta bread.
