Someone asked me recently why I post gluten free recipes. There is no one in my immediate family who must avoid gluten, but the older sister of my god child in Ireland has Celiac Disease. She is nearly 22 now and has learned to cope with the limitations in her diet, and there are many more products on the market now, both here and in Ireland. But when she was small, it was a different story, and we all became aware of exactly what gluten-free meant in a hurry. Back in those days, you had to concoct your own flour mixture with things like potato flour and bean flours. Today you can pick up Bisquick gluten free or Thomas Keller’s Cup4Cup gluten free flour, and there are many others to choose from. I particularly like the mixes for brownies and cakes that are easy to make. Anyway, I still save gluten free baking recipes and post some of them when I come across them as there are many more people out there with gluten intolerance than you would think. Here is a great recipe for almond cake.
