MISSISSIPPI MUD CAKE

Here is another quick recipe for a chocolate cake that starts with a box mix.

MISSISSIPPI MUD CAKE

1 – 18-1/4 oz box cake mix, either chocolate fudge or devil’s food

1 cup chopped pecans

2 cups miniature marshmallows

1 cup semisweet chocolate chips

Preheat oven to 350 degrees F.  Coat a 13 x 9 inch baking pan with cooking spray.  Prepare cake according to package directions  Pour into prepared pan and sprinkle with chopped pecans.  Bake cake until a toothpick inserted comes out clean, 35 to 40 minutes.  Take cake out of oven and sprinkle with marshmallows.  Return pan to oven and bake  minutes longer; place on wire rack.  Place chocolate chips in re-sealable plastic bag.  Microwave on high at 30 second intervals until chocolate is melted.  Snip off a small corner of he plastic bag with scissors.  Drizzle chocolate over cake.
