Zucchini Fritters with Dill Tzatziki

These are great and vegetarian also!

7 oz zucchini

1 teaspoon salt

4 oz ricotta cheese

1 egg

2 tablespoons flour

2 crushed garlic cloves

small handful each fresh basil and parsley, chopped fine

olive oil for frying

TZATZIKI

1 crushed garlic clove

2 tablespoons chopped fresh dill

7 oz Greek yogurt, plain

squeeze of lemon juice

Grate the zucchini, sprinkle with the salt then drain in a sieve for one hour.  Rinse and squeeze dry.  Whisk together the ricotta, egg and flour.  Add the garlic, basil and parsley.  Season well with salt and pepper and mix in zucchini.  Fry tablespoons of the batter in the oil for 2-3 minutes on each side.  Drain.  Mix all ingredients for the tzatziki together with salt and pepper and serve with fritters.
