I misplaced this recipe and have been looking for it for a couple of years now. I found it the other day mixed in with some gluten free recipes I have been putting aside for the older sister of my gold child.  This recipe is not gluten free, so not sure why it ended up there, but the lost is finally found!


1 pound cheese filled tortellini

3/4 cup olive oil

1/2 pound smoked turkey in 3/8 inch slices

1/2 pound prosciutto or ham, 3/8 inch slices

1 cup cooked fresh peas (or frozen)

2 carrots, cut julienne style

1 large red bell pepper, cut julienne style

chopped fresh basil or chopped parsley

1 garlic cloves, minced

1 head read leaf lettuce for garnish

Cook tortellini til just tender (5 minutes for fresh; 10 to 15 minutes for frozen or dried).  Drain, rinse and cool for ten minutes.  Put in bowl and toss with 1/4 cup oil, cover and refrigerate.  Cut meat into cubes, add peas, carrots & peppers, cover and refrigerate.  Before serving, whisk together basil (parsley), garlic and remaining 1/2 cup oil.  Pour over salad and toss well.  You can serve at this point (putting in red lettuce cups) or refrigerate for at least a couple of hours.
