This recipe uses I Can’t Believe It’s Not Butter Spread instead of butter.


2-1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup peanut butter (creamy or chunky)

1 cup I Can’t Believe It’s Not Butter Spread

1 cup granulates sugar

1 cup firmly packed brown sugar

2 eggs

1 teaspoon vanilla extract

Preheat oven to 350 degrees F.  Combine flour, baking powder, baking soda and salt in small bowl, set aside.  Combine peanut butter with spread in large bowl and beat with electric mixer until smooth.  Beat in sugars, then eggs and vanilla until well blended.  Beat in flour mixture until just blended.  If necessary, refrigerate dough until easy to handle.  Shape dough into one inch balls.  Arrange on ungreased baking sheet 2 inches apart.  Gently flatten each cookie and press crisscross pattern into tops with fork dipped in sugar.  Bake 12 minutes or until lightly golden.  Cool completely on a wire rack.  Store in tightly covered container.
