CRANBERRY WALNUT RELISH

Since Thanksgiving is just 4 weeks away, here is a recipe for cranberry relish which includes one of the super foods, walnuts.  This relish is a bit on the tart side but goes well with turkey.  The original recipe tells you to pulse all ingredients in a food processor, but I always leave about 1/4 of the cranberries  to throw in whole at the end.  Also a few chopped toasted walnuts.  I like things crunchy!

CRANBERRY WALNUT RELISH

1/2 cup sugar

1/2 walnut halves, lightly toasted

1/4 tsp. salt

1 – 12 oz bag fresh cranberries

1 large orange, zested, then peeled and thinly sliced, seeds removed

Pulse all ingredients in a food processor until almost smooth; chill until ready to serve
