In my family, we are all trying to eat more vegetables, cutting down on the size of meat portions.  That means coming up with new and interesting ways to serve the vegetables.  The following recipe is one I intend to try soon!  Note it uses French beans and not French cut beans.  It would be hard to get the French cuts beans into bundles, I think!


1 pound fresh French green beans, blanched

7 oz prosciutto, cut into 1/2 inch strips

3/4 cup teriyaki sauce

1/2 cup olive oil

1/4 cup water

2 tablespoons firmly packed dark brown sugar

2 teaspoons garlic powder

1 tablespoon minced dry onion

Preheat oven to 350 degrees F.  Line a rimmed baking sheet with foil.  Wrap 6 green beans with 2 pieces of prosciutto, and place on prepared pan.  Repeat with remaining green beans and prosciutto.  In a small bowl, combine teriyaki sauce, olive oil, water, brown sugar, and garlic powder, whisking to combine well.  Pour mixture over green beans, and sprinkle with minced dried onion.  Bake for 15 to 20 minutes, or until green beans are tender and prosciutto is crispy.
