SHRIMP and BOK CHOY STIR FRY

I didn’t eat much bok choy until recently.  Now I like to use it in all my stir frys.  Here is a quick and easy recipe.

SHRIMP & BOK CHOY STIR-FRY

1/4 cup Italian dressing

1 teaspoon grated ginger

2 teaspoon sugar

1 tablespoon oil

1 red bell pepper, cut into strips

1/2 onion, sliced

1/2 pound baby bok choy, cut into 1 inch pieces (about 2 cups)

3/4 pound uncooked, deveined peeled medium shrimp

Mix first 3 ingredients until blended.  Heat oil in large skillet on medium-high heat.  Add peppers and onions, stir fry for 2 minutes.  Add bok choy, stir fry for one minute.  Transfer to bowl.  Cover to keep warm.  Add one tablespoon dressing mixture and shrimp to skillet and stir fry for 2 minutes.  Add vegetables and remaining dressing mixture, stir fry to heat through about 2 minutes or until shrimp turn pink and vegetables are heated through.
