CLASSIC CORN CASSEROLE

Here is another traditional Thanksgiving dish.

CLASSIC CORN CASSEROLE

2 packages  frozen corn, 1 pound each; thaw and divide

8 oz chive or onion cream cheese

1/4 cup butter, softened

1/4 cup sugar

3 tablespoons flour

1 cup half and half

6 eggs

1 tablespoon baking powder (yes, tablespoon, not teaspoon)

1 cup chopped mixed green and red peppers

Heat oven to 350 degrees F.  Reserve one cup of corn.  Process remaining corn with all remaining ingredients except peppers in food processor until blended.  Pour into a 13 x 9 pan sprayed with cooking spray.  Stir in peppers and reserved corn.  Bake 50 to 55 minutes or until toothpick inserted comes out clean.  Let stand 10 minutes before serving.

NOTE:  You can also stir in about 4 chopped green onions, if you like.
