CRACKED PEPPER PARMESAN CRISPS

I love to make these to serve with salad.  You can put them on top of salad in place of croutons or just serve them on the side.  They are always a hit and you can change out the black pepper for other spices if you like.  Cayenne pepper or smoked paprika will work, for example.   I sometimes spread all the cheese on the baking sheet and then break into pieces after baking when I want to add them to salads.  These can also be used with dips and spreads.

CRACKED PEPPER PARMESAN CRISPS

3/4 cup shredded Parmesan cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon coarsely ground black pepper

Heat oven to 350 degrees F.  Combine cheeses.  Spoon into 14 mounds, 2 inches apart on a baking sheet, using about 1 tablespoon of cheese mixture for each.  Flatten mounds slightly.  Sprinkle with pepper.  Bake 6 minutes or until golden brown, rotating baking sheet after 3 minutes.  Transfer immediately to wire racks; cool completely.
