FIESTA MEATLOAF

I love meatloaf. I have a favorite recipe that I use most of the time, but occasionally I like to do something different. The recipe below spices up the meatloaf, and I sometimes mix ground turkey with the ground beef.

FIESTA MEATLOAF

2 pounds lean ground beef
1 – 6 oz package Stove Top stuffing mix for chicken
1 cup water
2 eggs, beaten
2 teaspoons chili powder
1/2 cup thick and chunky salsa
3/4 cup shredded cheddar and jack cheese

Heat oven to 375 degrees F. Mix all ingredients except for 1/4 cup salsa and cheese. Shape into an oval loaf in 13 x 9 inch loaf pan; top with remaining salsa. Bake one hour or until done (160 degrees F). Top with cheese; bake 5 minutes more until melted. Serve with mashed potatoes!
