GREEN BEANS WITH CRANBERRIES

Another interesting holiday side dish.

GREEN BEANS WITH CRANBERRIES

Toss 2 pounds green beans with 2 tablespoons olive oil and salt and pepper to taste.  Roast at 425 degrees F for 15 minutes.  Toss in 1/4 cup each dried cranberries and sliced almonds.  Roast until the beans are charred, 5 more minutes.

NOTE:  I tried this last night but did not “char” them.  Once I put the cranberries and almonds in, I returned them to the oven at 350 and got everything warmed through before serving.
