SPINACH APPLE SALAD

I like raw spinach and I love apples. Here is a salad for after the holidays which is light if you go easy on the blue cheese and very tasty.

SPINACH APPLE SALAD

Whisk 3 tablespoons olive oil, 1 tablespoon cider vinegar, one teaspoon Dijon mustard, 1/2 teaspoon honey and salt and pepper. Toss with a 10 ounce bag of baby spinach, one sliced apple and 1/2 cup each chopped toasted walnuts (or pecans), dried cranberries and crumbled blue cheese.
