PARMESAN ZUCCHINI

We call them zucchini squash in the U.S., in Europe they call them courgettes.  Whatever they are called, I think this vegetable is often overlooked and I like to especially create zucchini side dishes in winter.  This one is fast and simple.

PARMESAN ZUCCHINI

1 zucchini (about one pound), thinly sliced

1/2 pound fresh mushrooms, thinly sliced

1 cup spaghetti sauce

1 cup shredded, low moisture park skim mozzarella cheese

1/4 cup grated Parmesan cheese

Heat oven to 400 degrees F.  Combine vegetables and sauce.  Transfer to a 13 x 9 baking dish sprayed with cooking spray.  Bake 25 minutes, then sprinkle with cheese and return to oven for another five minutes or until mozzarella is melted.
