STEAKHOUSE POTATO SALAD

I generally make the same potato salad by the recipe that has been developed from my mother’s farm recipe, but I sometimes like to make this one for a change.  I also boil them in water rather than microwaving.

STEAKHOUSE POTATO SALAD

3 pounds small red potatoes (about 9) quartered

1/2 cup water

1/2 mayonnaise

1/4 cup ranch dressing

6 slices bacon, cooked and crumbled

1 cup shredded cheddar cheese

4 green onions, thinly sliced

Place potatoe in 2 quart microwaveable dish, add water, cover with lid and microwave on HIGH 12 to 15 minutes or just until potatoes are tender; drain.  Place in a large bowl.  Refrigerator one hour until completely cooled.  Mix dressings, add to potatoes with remaining ingredients, mix lightly.  Refrigerate until serving.

      • I’m going to try this next time I need a potato salad. We grab them from the deli sometimes at $7.99/lb ridiculous.

      • I know…and it’s amazing how much potato salad you can make with about $3.00 worth of potatoes. Also, I buy the small Yukons and red potatoes at the 99cents store sometimes. You get about 3 pounds.
