GREEK TOMATO AND CUCUMBER SALAD

I had some heirloom tomatoes in the refrigerator that needed to be eaten, as well as a cucumber, and I used this recipe.

GREEK TOMATO AND CUCUMBER SALAD

2 tomatoes, coarsely chopped

1 large cucumber, chopped

1/2 cup coarsely chopped green peppers

1/2 cup thinly sliced red onions

1/2 cup crumbled Feta cheese

1/4 cup Greek vinaigrette or other salad dressing

1/2 teaspoon lemon zest

Combine all ingredient and add the dressing before tossing.  This will easily stay good in the refrigerator for 24 hours and the flavors will blend.
