UNDONE STUFFED PEPPER CASSEROLE

I rarely go to the trouble of stuffing peppers.  However, I sometimes make this casserole, and it’s making the rounds again in cooking magazines lately after being around for years.

UNDONE STUFFED PEPPER CASSEROLE

1 pound lean ground beef or turkey

2 green peppers, coarsely chopped

3 clove garlic, minced

2 cups cooked long grain white rice

1 jar spaghetti sauce

1-12 cups shredded Italian cheese blend (or mozzarella and Parmesan)

Heat oven to 350 degrees F.  Brown meat with peppers and garlic in large skillet; drain.  Stir in rice, spaghetti sauce and 3/4 cup cheese.  Spoon into a 2 quart casserole, top with remaining cheese.  Bake 25 minutes or until heated through. and cheese on top is bubbling.
