SOUTHWEST THREE CHEESE CHICKEN

This can be made with variations depending on the type of cheese and seasoned breadcrumbs you have on hand.

SOUTHWEST THREE CHEESE CHICKEN

6 oz shredded cheddar and Monterey cheese mix (sharp and mild Cheddar).

Seasoned breadcrumb mix

6 small boneless skinless chicken breast halves — about 1-1/2 pounds.

Heat oven to 375 degrees F.  Spray baking sheet with cooking spray.  Mix cheese with seasoned bread crumbs and place in plastic bag.  Moisten chicken with water or cooking spray; place in bag with cheese and bread crumbs one piece at a time, press mixture onto both sides of chicken (does not need to be completely coated).  Place on prepared baking sheet, top with remaining cheese mixture.  Bkake 28 to 30 minutes or until chicken is done (165 degrees internally).
