CHICKEN SIMMER

Another easy chicken recipe….

CHICKEN SIMMER

2 teaspoons oil

4 small boneless skinless chicken breast halves (about one pound)

2 cups frozen broccoli florets, thawed

1 can condensed cream of chickn soup

1/4 pound shredded cheddar or American cheese

2 cups hot cooked long grain white rice

Heat oil in large nonstick skillet on medium heat.  Add chicken, cook 7 minutes or until done turning after 4 to 5 minutes.  Remove from skillet, cover to keep warm.  Add broccoli, soup and cheese, mix well, simmer on medium heat 7 minutes or until heated through and cheese is melted, stirring frequently.  Place chicken over rice, pout broccoli mixture over to serve.
