Another easy chicken recipe.


4 small boneless skinless chicken breast halves (about one pound)

1 cup thick and chunky salsa

1 can black beans, undrained

1 cup shredded cheddar cheese

Cook chicken in a nonstick skillet on medium heat 4 minutes on each side or until browned on both side.  Add salsa and beans.  Bring to a boil, cover.  Simmer on medium low heat 5 minutes or until chicken is done.  Top with cheese.  Remove from heat.  Let stand, covered, 5 minutes or until cheese is melted.
