SAVORY CORN MUFFINS

Here is another one of my own recipes that I fall back on when I want to make savory muffins in a hurry.  I am in the habit of putting a tablespoon of flax meal or wheat germ in just about everything.  It adds a little fiber and nutrients and even the picky kids can’t tell it’s there!

SAVORY CORN MUFFINS

Start with a box or pouch of muffin mix (makes 6 muffins) and follow directions for preparation, adding one extra egg.  Then add one tablespoon flax meal or wheat germ and mix.  Stir in 1/3 cup creamed corn and half a cup of fresh chopped chives.  Mix and spoon into prepared muffin cups.  Bake until golden on top.
