BAKED CHICKEN WITH FENNEL AND ORANGE

I have been using fennel more frequently this winter.  Here is a chicken recipe which uses it.  The recipe does not list measurements, just ingredients, so you can use your best judgment.

BAKED CHICKEN WITH FENNEL AND ORANGE

Brown chicken pieces and arrange in a baking dish with sliced fennel and sliced peeled oranges.  In a bowl, mix finely grated orange zest, orange juice, a splash of ouzo or Pernod, grainy mustard, minced garlic and olive oil; pour over all.  Bake at 375 degrees F until the chicken is just cooked through, 45 to 60 minutes.  Serve garnished with fresh dill.
