Green Beans With Mustard, Lemon & Mint

Green beans are my favorite vegetable, so I am always looking for different ways to prepare them.

14 oz green beans, trimmed

1 oz butter

zest and juice of one lemon

1 tablespoon Dijon mustard

3 tablespoons chopped mint

Bring a medium saucepan of water to the boil, add green beans and cook 5 to 6 minutes.  Drain well and refresh under cold water.  Set aside.  Melt the butter in the saucepan and add the lemon zest and juice, mustard , a good pinch of salt and pepper, then add the green beans and toss well until evenly coated.  Tip into a serving dish, scatter the top with fresh mint and serve.  You can also add freshly ground pepper before serving, if you prefer.
