1 head of butter lettuce, torn or cut into pieces

11 oz peas, fresh or frozen

1 shallot, finely chopped

juice of one lemon

1 tablespoon sherry vinegar

3 tablespoons extra virgin olive oil

Put the lettuce in  large bowl or on a serving platter.  Bring a medium saucepan of water to a boil, add peas and cook for 2 minutes.  Drain well and refresh under cold water until cooled.  Add the well drained peas to the lettuce and toss together.  In a small bowl, combine the shallot, lemon juice and vinegar, plus a pinch of salt.  Leave to stand for 10 minutes, then add the olive oil and season with ground black pepper.  Whisk and add to the lettuce and peas, toss together and serve.
