A good way to get walnuts into kids (if they will eat the nuts!–my youngest grandson loves them, the older one has never cared for nuts in anything though he loves eating peanuts on their own).  I also put a heaping tablespoon of flax meal or wheat germ in these for more nutrition.


1/2 cup butter

3 oz unsweetened chocolate, coarsely chopped

1 cup sugar

2 eggs

1 teaspoon vanilla

2/3 cup flour

1/4 teaspoon baking soda

1/2 cup chopped walnuts

In a saucepan heat and stir butter and chocolate over low heat until smooth; set aside.  Preheat oven to 350 degrees F.  Line an 8 x 8 pan with foil, leaving about one inch of the foil extending over the ends of the pan.  Grease foil, set aside.

Stir the sugar into the cooled chocolate mixture.  Add the eggs, one at a time, beating with a wooden spoon just until combined.  Stir in vanilla.  In a small bowl stir together the flour and baking soda.  Add flour mixture to chocolate mixture; stir just until combined.  Stir in nuts.  Spread batter in prepared pan.  Bake for 30 minutes.  Cool in pan on a wire rack, then remove brown from pan, using the overlapping foil to lift.  Place on cutting board and cut into large bite-size pieces.
