A charlotte is a dessert made from bread, breadcrumbs or spongecake or lady fingers. It is usually molded and left in the refrigerator for several hours to form. This one is a little different because it is sort of like a cobbler in that it has berries, apples and a simple batter.
APPLE-BERRY CHARLOTTE
6 tablespoons unsalted butter, melted and cooled, plus more for the pan
2 tablespoons plain dry bread crumbs
3 large eggs
1/4 cup milk
1/4 teaspoon vanilla
1-1/4 cups granulated sugar
1-1/2 cups flour
1 cup blackberries plus 8 to 12 berries for garnish
4 large Granny Smith or other firm tart apples, peeled, quartered, cored and thinly sliced crosswise
1 cup blueberries
1/2 teaspoon cinnamon
Powdered sugar for dusting
Combine butter, bread crumbs, eggs, milk, vanilla, sugar and flour and mix until combined. Melt some butter in a baking dish or cast iron skillet, then add berries, apples and cinnamon. Spread the batter over the fruit and bake at 350 degrees for about 35 to 45 minutes. Dust with powdered sugar.
