I came across this recipe the other day and am re-posting for all you chocolate lovers out there!  We don’t necessarily think of chocolate for St. Patrick’s Day, but I can tell you that I’ve never met an Irish person who did not love their chocolate.  Here you go…Happy St. Patrick’s Day!

I am not sure who sent me this recipe.  I printed it out in 2001 from the AOL account I had at the time, but I put no identifying information on it.  If you love chocolate, you MUST try this one!

2 sticks margarine

1 cup water

5 teaspoons cocoa

Melt margarine with water and cocoa.  Pour over and mix with:

2 cups sugar

2 cups flour

Beat until thick, but not stiff, then add:

1/2 cup buttermilk

1 teaspoon soda

2 eggs

Mix well and spread on a greased cookie sheet and bake at 350 degrees F for 25 to 30 minutes.

For the Frosting:

Heat and stir until well blended, 1 stick margarine, 5 Tablespoons cocoa, 6 Tablespoons milk, then add one box powdered sugar and 1 cup pecans.  Pour over cake while still warm.
