PEA AND SNAP PEA MEDLEY

Peas are coming into season!  Here is a recipe that I love because of the snap peas.

PEA AND SNAP PEA MEDLEY

1/2 pound sugar snap peas, trimmed

1 cup frozen or fresh peas (hulled)

1/4 cup Italian salad dressing (I like honey balsamic actually)

Add vegetables to 2 cups boiling water in a large skillet, cook 2 minutes or until crisp tender.  Drain.  Heat dressing in same skillet on medium high heat.  Add vegetables, cook one minutes until heated through.

EXTRA Stir in chopped fresh chilves or basil, or 2 tablespoons crumbled bacon.
