PESTO TORTELLINI SALAD

A quick pasta main or side dish!

PESTO TORTELLINI SALAD

20 oz cheeze tortellini

1/4 cup pesto

1/4 cup plain Greek yogurt

1 tblespoon fresh lemon juice

2 cups arugula or other lettuce

Cook the tortellini until al dente; drain and cool.  Whisk pesto, yogurt and lemon juice, season to to taste.  Add tortellini and lettuce; toss to combine.  Season again with ground black pepper, if desired.
