These cookies are a little soft and chewy with lots of chocolate flavor.


1/2 cup butter

1/2 cup sugar

1/3 cup brown sugar, packed

1/3 cup baking cocoa

1/2 teaspoon salt

1/4 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon vanilla

1 large egg

2 tablespoons milk

1 cup plus 2 tablespoons flour

1 teaspoon espresso powder

1 cup bittersweet chocolate chips

1 cup semi sweet chocolate chips

Preheat oven to 375 degrees.  Lightly grease two baking sheets, or line with parchment.  Beat together butter, sugars, cocoa, salt, baking soda, baking powder and vanilla.  Add the egg, beating until smooth.  Scrape sides of bowl and beat again until smooth, beat in the milk.  Add the flour and espresso powder, mixing to combine.  Stir in the chips.  Drop the cookies by the heaping tablespoon onto the prepared baking sheets, spacing them about 2 inches apart.  Bake the cookies 12 to 14 minutes until they lose their shiny appearance and appear set, though still soft.  Remove from oven and cool right on the pans, or transfer to a rack to cool.  Makes about 30 cookies.
