My father loved radishes.  He ate them raw with raw onions on sandwiches and just by themselves.  I never see a recipe with radishes that I don’t think about him and all those radishes my mother would wash, trim and then slice for him.  None of the rest of the family liked then, though I could manage one or two here and there, and nowadays I sometimes put them in salads just to add color and a little kick.   Here is a recipe from Kroger which makes a meal in itself, is light because the dressing doesn’t use any mayonnaise, and it includes radishes!


1 – 5 oz can solid white tuna in water, drained

1 – 15 oz can cannellini beans, drained and rinsed

6 radishes, cleaned, trimmed and chopped

1 large lemon, zested and juiced

1/3 cup chopped parsley

4 teaspoon olive oil

salt and pepper to taste

Combine all ingredients in a large bowl and gently mix until incorporated.  Serve in lettuce cups or with crackers.  Refrigerate leftovers.
