This is an easy dessert that can be made ahead of time.   And…you can get creative and mix the whipped cream with any type of fruit.


12 oz blackberries

juice of one lemon

3 oz sugar

1/2 pint double cream

shortbread biscuits to serve

Mash most of the blackberries with the lemon juice and half the sugar.  Whip the cream with the remaining sugar.  Fold the whipped cream and blackberry mixture together to make a mauve cream, then tip into a freezer container and freeze until set.  Serve in scoops in glasses, with the shortbread and remaining blackberries on the side.
