PEACH MELBA SMOOTHIE

I sometimes make this in place of a meal, usually breakfast or lunch.  Since we don’t generally find fresh custard here, I use a canned custard that comes from England.

PEACH MELBA SMOOTHIE

l –  10 oz can peach halves, drained and rinsed

4 oz frozen raspberries, plus a few extra to serve on top

3 oz orange juice

1/4 pint custard (can also substitute vanilla pudding)

Put the peach halves in a blender with the raspberries.  Add the orange juice and most of the custard, blend.  Pour over ice, garnish with a spoonful or custard and a few raspberries.  Best served very cold, chilled.
