EASY BEAN DIP

This takes about 5 minutes to prepare.  In fact, it takes longer to clean the food processor than the prepare this dip!

EASY BEAN DIP

Drain a 15 ounce can of cannellini beans and pour into food processor.  Add 8 ounces feta cheese, one tablespoon lemon juice and one crushed garlic clove.  Blitz until smooth.  Then stir in 3 tablespoons chopped herbs (dill, mint or chives work well–I prefer chives) and season with pepper.  Serve on wholegrain toast or crackers.
