Another pound cake variation.
SPARKLING CIDER POUND CAKE
3/4 cup butter, woftened
1-1/2 cups sugar
3 eggs
1-1/2 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sparkling apple cider
GLAZE
3/4 cup confectioners sugar
3 to 4 teaspoons sparkling apple cider
Preheat oven to 350 degrees F. Line bottom of greased 9 x 5 loaf pan with parchment paper, grease paper (I use loaf papers). Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with cider, beating well after each addition. Transfer to prepared pan. Bake 45 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
In a small bowl, mix glaze ingredients until smooth; spoon over cake, allowing it to flow over sides.
