Here is a simple way to roast potatoes (hurry before it gets too hot!– or you can put them in a grilling basket and grill them outdoors!). This recipe also work with sweet potatoes.
CHUNKY POTATO SLICES
4 large potatoes, unpeeled
a little olive oil
rosemary sprigs, leaves stripped
2 garlic cloves, very finely sliced
Slice the potatoes to the thickness of your little finger. Tip into a pan of cold salted water and bring to a boil; simmer for 3 minutes until just cooked, then drain. Rub each slice with a little oil, then roast in oven, or cook on griddle or barbecue until golden and charred on each side. Place in a dish and sprinkle with rosemary and garlic. Drizzle with a little more olive oil, season with salt and serve.
