This is a really healthy recipe, especially if you don’t frost the muffins (small cupcakes). I came up with the recipe one day when I had a pouch of Betty Crocker Chocolate Chip Muffin mix and some over ripe bananas. Prepare the muffin mix as directed on the package, but also add one beaten egg, one heaping tablespoon of flax meal or oat bran, and a heaping half cup of black walnut pieces. Mash two small bananas and stir into the mixture. Then drop into small muffin cups and bake until done. When I took these to work for a pot luck, I frosted them lightly with chocolate frosting and they were a big hit. One person commented that I had certainly gotten a lot of different flavors into such small, tiny muffins! When I don’t plan to frost these muffins, I sometimes put 5 or 6 chocolate chips on top so there is a nice bit of chocolate on the top of each muffin.
