My Mother’s Crisp Lemon Sugar Cookies

Another one of the recipes my mother made so often that she kept it in her cookbook.

CRISP SUGAR COOKIES

1-1/2 cups sugar

1 cup butter

2 eggs

3 tablespoons sour cream

1 teaspoon vanilla

1/2 teaspoon lemon extract

3 cups flour, measure, then sift

1/2 teaspoon salt

1/2 teaspoon baking soda

Gradually add sugar to butter, cream until light and fluffy.  Beat in eggs, one at a time.  Add sour cream and flavorings.  Sift flour with soda and salt; add to mixture and mix well.  Dough will be quite soft.  Cover dough with plastic wrap and chill several hours or over night.  You can wrap the dough in rolls before chilling, if you prefer.  Slice 1/4 inch slices or put into cookie fun; or roll out on lightly floured board in small amounts at a time and cut out with cookie cutters.  Bake at 375 degrees F 8 to 10 minute or until lightly browned.
