SHOOFLY CAKE

This is a recipe from Pennsylvania where Shoofly Pie originated.  This cake version is served at diners in the heart of Pennsylvania coal country.

SHOOFLY CAKE

Preheat oven to 375 degrees F.  Grease and flour a 9 x 13 inch pan.  In a large bowl, work together 4 cups flour, one cup dugar, 1 cup brown sugar and one cup butter to form crumbs.  Reserve one cup mixture.  In a separate bowl, mix one cup molasses, 2 cups hot water, and 2 teaspoons baking soda.  Combine wet and dry ingredients.  Pour into prepared baking pan.  Sprinkle reserved crumbs on top.  Bake 10 minutes.  Reduce heat to 350 degrees F and bake 30 to 40 minutes more until a sharp knife inserted comes out clean.
