This is a great side dish and only takes about 20 minutes to put together.


1/4 cup panko bread crumbs

salt and pepper

1 tablespoon finely chopped fresh parsley

1 teaspoon freshly grated lemon peel

1 tablespoon freshly grated Parmesan cheese

8 thin slices prosciutto

Heat oven to 400 degrees F.  In a small bowl, mix bread crumbs, salt and pepper.  Add parsley, lemon peel and cheese, toss well.

In a large saucepan, heat 4 cups water and one teaspoon salt to boiling.  Add one pound trimmed asparagus.  Heat to boiling, then remove asparagus from pan, drain and cool.

Butter a shallow baking dish with unsalted butter.  Toss cooled asparagus with two tablespoons olive oil; sprinkle with salt and pepper.  Divide asparagus into four bundles.  On work surface, arrange two slices of prosciutto so they slightly overlap.  Top with one asparagus bundle and roll up carefully.  Place in baking dish.  Repeat with remaining prosciutto and asparagus.  Flatten tops of bundles slightly and sprinkle with topping.  Bake about 10 minutes or until thoroughly heated.   Serve immediately.


  1. Sounds delicious. I roast asparagus in the oven all the time, so I’ll have to try this.
