GREEN BEANS WITH GLAZED SHALLOTS IN LEMON DILL BTTER

I eat a lot of green beans, and I am always looking for ways to make them different.  My mother always cooked her green beans with a ham hock or some bacon; over the years, I added a halved onion to the mix.  But there are times when I want the beans to be fresh and crispy and not cooked all day with the ham and onions.  This is a good recipe for guests also.

GREEN BEANS WITH GLAZED SHALLOTS IN LEMON-DILL BUTTER

1 pound fresh green beans, trimmed

2 tablespoon butter

2 shallots, finely chopped

1/2 teaspoon sugar

1 teaspoon lemon juice

1 tablespoon chopped fresh dill week

1/4 teaspoon salt

In a 4 quart Dutch oven, heat one to 2 inches water to boiling.  Add beans, boil uncovered 8 minutes until crisp tender.  Drain, return to Dutch oven.  In a skillet, melt butter over medium heat; add shallots, cook 2 minutes stirring, until crisp tender.  Stir in sugar.  Cook 3 minutes longer, stirring occasionally, until shallots are glazed and brown.  Stir in lemon juice, dill weed and salt.  Add shallot mixture to green beans, toss to coat.
