APPLE CAKE – More Apples…

I love cooking and baking with apples, and I like trying variations of apple cake.  Here is one that is easy to make.


Beat together 2 eggs, 2 cups sugar, 1/2 cup vegetable oil, and 1 teaspoon vanilla until light and fluffy.

Sift together a dash of salt, 2 teaspoons soda, 2 teaspoons cinnamon, and 2 cups flour, then add to egg mixture using mixer on low speed.  Dough will be stiff.  Fold in 1 cup of chopped nuts and 4 medium apples, unpeeled but diced into pieces.

Bake in a 10 x 13 x 2 pan one hour at 350 degrees F until done.  Once cooled, combine 1/4 cup butter, 1 tsp vanilla, 3 oz light cream cheese, a dash of salt and 1-1/2 cups powdered sugar.  Beat until creamy and spread on top of cake.
